DIRTY RICE DRESSING

We mix this wonderful stock with white rice to create a great Cajun spiced rice dressing. Sometimes call dirty rice.

PORK STUFFING
This stuffing is made with select cuts of pork meat ground and combined with onion, bell pepper, and that wonderful Cajun sausage seasoning.

EGGPLANT
Browned ground beef and pork, sauté vegetables, with that special Cajun seasoning. Egg plant is chopped and smothered until it falls apart. The finished product is mixed with brown rice.


SHRIMP ETOUFFEE
Etouffee means to smother. Start by sautéing onion, bell pepper, and that wonderful Cajun seasoning. Add shrimp and cook until tender. The finished product is combined with white rice.

CRAWFISH ETOUFFEE

BROCCOLI & CHEESE
Sauté onion, bell pepper and that wonderful Cajun seasoning, smother broccoli until tender. Combine with cheese and white rice.

ALLIGATOR DRESSING
Sauté onion, bell pepper, and that wonderful Cajun seasoning, smother alligator meat in tomato sauce. Combine finished product with white rice.

BOUDIN
Pork, vegetables, and that wonderful Cajun seasoning simmered until tender. Mixed with white rice. It usually is put into a natural pork casing resembling a sausage. Pork liver is used in cooking giving Boudin a slight liver flavor. A little spicy, it goes well as a meal or appetizer and is great with a cold beer.

SHRIMP & CRAB STUFFING
Blue crab meat and shrimp are combined with that wonderful Cajun seasonings to produce a delicious bread crumb stuffing.
